These "puddings" don't use cooked Fruits, but you'd never know it. Serve them straight from the blender or very gently warm them (so that the Fruit doesn't heat above 115 degrees).
To adjust for diabetic or hypoglycemic diets simply use sugar substitutes in place of the honey or maple syrups and other unrefined sugars.
Mix in medium bowl
Let Fruit sit while grinding sesame seeds or measuring tahini, then drain. In same bowl mix Fruit with

Let stand for at least 15 minutes before serving. If you want to save time on a hectic morning you can make it up the day before.
Mix together, cover, and refrigerate for forty eight hours. Stir a few times during this period.

This is more like an apple sauce than a pudding. For a simpler version that's great for breakfast on a cold morning I like to just puree the apples and banana with a little sea salt, and gently warm it.

If you want the pudding thicker stir in finely ground nuts (preferably toasted first).
Variation, stir in:
Puree in blender, 2 bananas, 10.5 ounces or 2 cups soft tofu, 3 tablespoons maple syrup, 1/4 teaspoon cinnamon.

Pour into casserole dish, cover and refrigerate overnight. Eat as is or cook at 350 degrees for 30-60 minutes until pudding is set.
