Parisian Hot Chocolate

Use a whip to mix the following ingredients in a medium-size heavy pan over low heat, stirring occasionally:

4 ounces grain-sweetened chocolate or carob chips
2 1/2 cups nondairy milk
1 tablespoon unrefined sugar
2 sticks cinnamon

When mixture begins to bubble around the edges remove from heat and stir in 1/2 teaspoon vanilla extract.

Vegan "Egg" Nog

Grind in blender 2/3 cup raw almond, cashew, or macadamia nuts, soaked overnight and drained. When finely ground, add 6 dates, pitted or 1/2 cup chopped dates and continue processing until dates are finely chopped.

Add to blender and puree until smooth

2 cups nondairy milk
2 teaspoons vanilla extract
2 teaspoons maple syrup
1/2 teaspoon ground nutmeg
2 - 3 frozen bananas

Cocoa Milk

Use a blender to mix nondairy milk with cocoa powder (carob powder during Weight Loss). I've tried stirring and using a whip but the blender works best to eliminate lumps and give the milk a nice froth. I sometimes blend up a big batch and pour it into a pitcher that I keep in the fridge. This way it's ready for a quick drink, or to heat up for a nice hot cocoa in the morning.

Cream Soda

One day I was dying for a root beer float, but alas, the freezer was devoid of ice cream, not even a scoop of Tofutti had survived the kids "locust" run on the kitchen. So I came up with this substitute, which is a much better alternative than ice cream anyway.

Mix caffeine-free, diet soda such as Dr. Pepper, Coke, Pepsi, orange, or root beer with nondairy milk to taste, generally anywhere from 3/4 soda to 1/4 milk to 1/2 and 1/2. No need to stir, just drink up.

Please Note: consumption of this beverage will most likely result in a severe case of upper intestinal gaseous matter (musical belching).
