Creamy Red Pepper Soup Protein

from the UnDiet Fall Trial 7 Days of Dinner Menu

This soup is so easy to freeze that I've made this recipe a double batch.

In a stock pot saute in olive oil over moderately low heat until the onion is softened

4 small onions, chopped

Add and simmer, covered, for 5 to 10 minutes

2 cups filtered water

In a blender puree the onion mixture with  

1 cup cream
3 cups (grain free) soy milk, or light vegetable broth, or mock chicken broth
5 red bell peppers, roasted, peeled and seeded

Pour puree back into the stockpot adding

2 teaspoons Worchestershire sauce
1/2 teaspoon Tabasco

Heat over moderately low heat, stirring in by the handful

28 ounces grated Cheddar, until the Cheddar is melted and the soup is hot (but do not let it boil)

(Garnish with chopped cilantro).

Spiked Cuke & Tomato Salad Neutral

Make this salad at least 30 minutes & up to 4 hours before serving.

Cut ends off, peel, cut lengthwise, scoop out seeds, cut into 1/4-inch thick slices

2 cucumbers

Toss with

2 pints cherry tomatoes, cut in half or 4 large tomatoes, seeded and cut into large chunks
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon or lime juice, or unfiltered, unpasteurized apple cider vinegar
1/4 teaspoon hot sauce
sea salt and white pepper to taste

Leftover salad can be served inside a whole wheat pita with a falafel patty or veggie burger patty.

Coffee Baked Ham

We call this Coffee Baked Ham because it's baked with liqueurs that are typically found in coffee drinks.

Preheat oven to 300 degrees.

Place 10 pound precooked ham with it's rind intact in a roasting pan rack inside a roasting pan, with the fatty side up. Roast, uncovered for 3 hours (if you have a smaller or larger ham, roast 18 minutes per pound). During the last hour trim off the rind and cut a criss cross pattern in the fat. Place whole cloves in each of the X's of your pattern. Sprinkle with 1/2 to 3/4 cup unrefined sugar and 1/4 cup Frangelico, Tia Maria, or fruit liqueur, bourbon, or Kahlua. In a mixing cup whisk together 1/2 cup of the same liquor and 2 tablespoons dry mustard. Pour liquor into the roasting pan. Baste frequently with liquid and pan drippings.

Zucchini-Red Pepper Tian Neutral

from the UnDiet Monthly Menu - December

Preheat oven to 375 degrees. Saute in a little olive oil, for about 5 minutes

1 large onion, quartered and thinly sliced
2 garlic cloves, thinly sliced, lightly salted
1/4 - 1/2 teaspoon herbs*

Spread the onions evenly over the bottom of a casserole dish and season with pepper. In same pan heat a little more olive oil to saute

2-3 cups zucchini (or yellow squash), sliced into 1/4-inch rounds and lightly salted
1/4 - 1/2 teaspoon herbs*

Stir frequently until they just start to color, about 10 minutes. Spread the zucchini over the onions. Tuck among the zucchini

1 cup roasted red or yellow bell peppers cut into strips (or saute a fresh pepper until soft)

Cover with foil and bake for 25 minutes. Remove the foil and continue baking for 10 minutes to allow the juices to evaporate. Serve warm or at room temperature.

* Herb mixtures to choose from

Broccoli with Dried Tomato Neutral

from the UnDiet Monthly Menu - December

The night before or in the morning cut dried tomato into matchsticks and soak in extra-virgin olive oil

Saute broccoli flowerets until crisp-tender. Remove broccoli from heat and stir in soaked, dried tomato cut into matchsticks, drained, enough of the soaking oil to coat broccoli, sea salt & black pepper.

Onion Popovers Protein

Makes 24 muffins. They can be baked and stored in the freezer up to 1 month, or in the refrigerator for 2-3 days. Thaw frozen popovers on a cookie sheet in a 350 degree oven for 10 minutes

Preheat oven to 400 degrees.

Process ingredients below in a blender, scraping sides 2-3 times. 

2-1/2 cups soy flour
2 cups soymilk
3 large eggs
1/2 cup melted butter
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Stir in

2/3 cup dried onion, minced or chopped

Pour batter into greased muffin cups. Bake 30-35 minutes until puffed and browned. Unmold and pierce each popover with a sharp knife to release the steam.

German Plum Pudding Neutral

from the UnDiet Monthly Menu - December

Place halved and pitted plums in a buttered oven proof dish. Cover with Sucanat, date sugar, maple sugar,or a mix of these. Bake at 350 for 30 minutes. When cooled enough to handle slip off and discard skins. Serve warm, room temperature, or cold on top of a pool of Vanilla Creme Fraiche.

Variation:

This recipe works well for almost any fruit. You just can't call it German Plum Pudding when you use peaches.

Vanilla Creme Fraiche

Stir together - don't use blender or food processor

vanilla extract
creme fraiche
unrefined sugar

Wait 10 minutes for the sugar to dissolve and stir again.
